Khichdi is a South Asian rice dish made from rice & lentils. It’s commonly considered to be India’s comfort food, and was the inspiration for the Anglo-Indian dish of kedgeree.
Ingredients
1 cup rice
1/2 cup masoor dal
3-4 cups water
1 tsp turmeric powder (haldi)
1 tsp asafoetida (heeng)
2 tbsp ghee
2 tsp jeera (cumin seeds)
1 strand curry leaves
Salt to taste
2 tsp pepper powder (optional, makes Khichdi very spicy)
1 strand coriander leaves (optional, for garnishing
Method
1- Wash and clean rice and dal.
2- Pressure cook rice together with dal, haldi (turmeric powder) and salt with 3-4 cups of water.
3- Cook on medium flame.
4 – After a whistle (after 10-12 minutes), turn off the flame and allow the cooker to cool down completely. The Khichdi should be mushy, that is, the water should’ve completely evaporated by now.
5 In a pan, add 1 tsp ghee and melt it.
6 – Prepare ‘tadka’ by adding jeera (cumin seeds) to the ghee in pan and frying a little.
7 – Pour the tadka over the Khichdi and mix well.
8 – Pour curd over the Khichdi and mix well.
9 – To spice up the Khichdi, prepare a tadka of curry leaves with heeng (asafoetida). It can be prepared by melting ghee in a pan, adding curry leaves and heeng to it and frying them a little.
10- Boil potatoes with little salt or microwave them. Cut them into small pieces and add them to the Khichdi along with the tadka of curry leaves and heeng.
11- Mix well and serve Khichdi hot.
