½ Onion chopped
½ Tsp dried basil
Olive oil
1 Tin plum tomatoes
Salt and pepper
¾ Pint hot vegetable stock
1 Clove garlic chopped
Pour a little olive oil in a saucepan and place on a medium heat. Add the onions and garlic and fry for 2-3 minutes.
Add the rest of the ingredients. Bring to the boil. Fit a lid, turn down the heat and simmer for 20 minutes.
Remove the lid and turn off the heat. Use a handheld blender to blend to a smooth soup.
Taste and season before serving. Enjoy!
